Looking for a quick and healthy snack or meal? Thanks to Sheri Terrell to sending this healthy recipe in. Sheri has been in our program since May of 2008 and is still going strong.

Mexican Chicken Breasts

 1 pkg. taco seasoning mix
4- 4oz. chicken breasts
1 cup salsa
¼ cup fat free sour cream

Place taco seasoning mix in plastic bag with chicken.  Shake and coat well.  Place chicken in sprayed casserole dish and bake for 30 minutes at 375 degrees.  Top chicken with salsa 5 minutes before done then top with sour cream before serving.
