Eat Yourself Thin

Tasty Tomato Basil Soup
(Serves Two)

2 x Tomatoes
2 x cups of Tomato Juice
7 x leaves of fresh Basil
1/2 cup of heavy Whipping Cream (you can cut down on this to lower the fat or substitute it for something healthier)
1/4 cup of Butter (You can cut down on this to lower the fat or substitute it for somehting with less fat)
Salt and Pepper to taste

1. Peel, seed and dice tomatoes.

2. Simmer tomatoes and juice in a stock pot, on
medium heat for about 30 minutes
 
3. Puree tomato mixture with basil leaves and
return to the stock pot
 
4. Stir in cream and butter and season with salt and
pepper before serving.
