Coppell, TX Boot Camp Recipe of the day – Checca Pasta

Here’s a quick recipe I love:

Checca Pasta

10-12 plum tomatoes, peeled, seeded and chopped
10-12 basil leaves – chopped
3 cloves garlic, peeled and sliced thin 
2 teaspoons olive oil
salt and pepper
1 box whole wheat pasta – any shape

No cooking time.  Combine all the ingredients except the pasta 1 hour ahead of time to let the flavors combine.  Cook the whole wheat pasta until al dente.  Toss with sauce.
