Apple-Walnut Chicken Salad (Serves 2)
5 ounces cooked chicken breast, cut into ½”-3/4” chunks
½ cup chopped celery
¾ cup chopped apple
2 ounces chopped walnuts
1 tablespoon raisins
1/3 cup prepared low-sugar Italian dressing
Bibb lettuce (optional)
In a medium bowl, gently stir together the chicken, celery, apple, walnuts, and raisins. Pour the
dressing over the mixture and toss gently to coat. Serve on a bed of Bibb lettuce if desired.
