Memorial Day Weekend is coming up, so let’s get our BBQ pits out and throw some chicken on the grill!

Chicken is a fantastic source of lean protein. People who are meat eaters, but are looking for ways to reduce the amount of fat in their meals, can try eating more chicken. The leanest part of the chicken is the chicken breast, which has less than half the fat of a trimmed Choice grade T-bone steak. Chicken is also a very good source of the cancer-protective B vitamin, niacin. In addition chicken is an excellent source of the trace mineral, selenium. Selenium is of fundamental importance to human health. It is an essential component of several major metabolic pathways, including thyroid hormone metabolism, antioxidant defense systems, and immune function. Chicken is not only a very good source of niacin, but is also a good source of vitamin B6. Both of these B vitamins are important for energy production.

Jalapeno Lime Chicken
Ingredients

  • 1 cup orange juice concentrate
  • 2/3 cup chopped onion
  • 1/2 cup lime juice
  • 1/2 cup honey
  • 1 jalapeno pepper, seeded and diced (leave seeds in for more heat)
  • 2 teaspoons ground cumin
  • 2 teaspoons grated lime peel
  • 1/2 teaspoon garlic salt
  • 2 garlic cloves, minced
  • 10 skinless, boneless chicken breast halves         

 NOTE: Ingredients for a changed serving size are based on a calculation and are not reviewed by the author or tested. Please also consider scaling up or down cooking containers as needed.

Directions

  1. In a 4-cup measuring cup, combine the first nine ingredients. Pour 2 cups into a large re-sealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 2-4 hours. Cover and refrigerate remaining marinade for basting.
  2. Coat grill rack with nonstick cooking spray before starting the grill. Drain and discard marinade from chicken. Grill chicken, covered, over medium heat for 4-6 minutes on each side or until juices run clear, basting frequently with the reserved marinade.
